No Fuss Grilled Hummus & Tomato Toast

Because it doesn’t have to be complicated to be delicious.  Here’s a simple recipe with easy to find, local ingredients that you can make at any time of the day!  Part of the #NoRecipe trend on twitter… it could easily be become a fun appetizer if cut in small pieces.

No Fuss Grilled Hummus Toast

Ingredients
  • Rye Bread Slice
  • Roasted Garlic Hummus
  • Fresh Tomatoes from the Garden
  • 6 years old Cheddar Cheese (or any other strong cheese)
  • Chopped Coriander for the garnish
Instructions
  1. - Toast the bread
  2. - Spread your hummus
  3. - Add the sliced tomatoes, cheese on top and grill for 1-2 minutes in the oven (on broil)
  4. - Sprinkle the freshly chopped coriander leaves
  5. watch out, it might be hot.... Bon Appetit!

Ok so on Monday we made “red pesto” chicken and we were left with a decent amount of delicious chicken and left over juices with tomatoes from the pan.  For everybody who have kept all the juices and tomatoes, like I advised on Monday, here’s what we are going to do with them.  Now the juices have been in the fridge for a day or two, time to get it out and use it to make a delicious and filling soup that will for sure please everybody and save you some precious time in the kitchen.

Homemade Sun Dried Tomatoes

This past week have been quit nice here in Montreal… The birds were singing, the sun was shining and my cherry tomato plant have been producing juice cherry tomatoes like crazy!! I’ve harvested so many, this week only, that after numerous salads and others tasty recipes, I decided that it was the time to find another way to preserve these tasty jewels by making a few batches of homemade sun dried tomatoes.

The concept is really simple and it’s almost not worth calling this a “recipe” but if you never made or wonder a way to make your own sun dried tomatoes, here’s one! There is obviously other ways to make these little pieces of heaven but i find that the oven technique is the fastest one. You barely need anything beside a bit of oil, some parchment paper and a LOT of patience!

I have to admit that the drying time is very long but its worth it so I always make sure to do a lot of tomatoes at the same time and then preserve them in an air tight container or bag in the fridge or the freeze for 6 to 9 months 🙂 Then the recipe possibilities you will have with those sun dried tomatoes are worth every hours you waited for these babies to dry in your oven. Slow Cooked Lamb Loin Chops with Spicy Fennel Rub

Ahhh today was such an amazing day 🙂 I took it easy, had fun in my kitchen and went for many long walks outside with my love and my doggy to enjoy the fresh cold September wind and the gorgeous sun that we had today. It’s not surprise anymore, the weather is getting colder and fall is officially here.

I had some lamb chops in my fridge and was out of ideas of what to do with them but after getting ton’s of great ideas from twitter and facebook, I deceided to create this oven slow cooked version that I know you will LOVE! I just finished eating it and I’m almost thinking going to get another plate. I served this “stew” like on a left over Basmati rice I had and it was amazing but feel free of eating it just like this or maybe with Quinoa?
