Graines a Roussir

Here’s an easy recipe for an amazing and versatile spice blend that comes from the Caribbean!  My step dad has a lot of family in Guadeloupe and this is where I was exposed to the delicious French Caribbean cuisine.  I’m a sucker for a good chicken colombo and I always have some roucou in my fridge.

The only name I know for this blend is in French and it’s called: graines à roussir.  If I was to give you a quick French course, the word “graines” means seeds and “roussir” means burn lightly, roast, turn brown.. you get the idea?  I guess the best way to translate this would be: seeds to burn lightly.

That’s what you will want to do with these before either use them whole or in powder form, grill them gently on the stove top till they start smelling good and make sure not to burn them.

I usually make a bunch in advance, roast the pack, process it to powder and keep the powder for easier use.  Although I’m sure doing it right on the spot is a much better option if you want maximum flavour.

Personally, I enjoy the simplicity of always having some already grounded in a small container.  Mainly used as rubs for red meats, chicken or fish but you can also use them for a ton of other things like sauces and even bread!

Fun Spring Salad with Fennel, Carrots & Apples

Even tho it’s technically spring right now, I’m looking outside my window and I don’t see it.  Last week, for our first day of Spring, we had a big snowstorm in Montreal and since it looks like we are in the middle of January.  The worst thing is, 2 weeks ago there was no more snow outside, the weather was starting to be nice and uplifting and the birds were singing.  I’m wondering how surprised those pore little birdies were when they realized that only a few days after they either woke up or came back from the south, mother nature still had a ton of snow and cold weather for them.

One thing for sure, mother nature is getting more and more erratic with the years… and I cant believe some people are still so close minded that they don’t believe in global warming.  …Ugh, ignorance like this annoyed me till no end and I feel like slapping all those people in the back of the head for having such ignorance but again, it’s not my place to do so but since this is my blog, I’m venting away lol  …sorry about that that.

On a much funner and tastier note, I decided that even if it’s not as sunny as I would have expect it today, I’m not going to let this weather gets to me and I will be celebrating the arrival of Spring anyways with some fun light and flavorful salads like this one.  It’s also part of my few posts that I’m dedicating to my contracted models who are seeking for healthy and low calories recipes to prepare because they have to go on photo shoots very soon.  I hope you’ll enjoy this fennel, carrot and green apple salad as much as I did.  It’s super easy to do, barely take any ingredients and will keep you full for quit a while.  Enjoy!

Roasted Fennel with Grains of Paradise, Honey and Thyme

I meant to post this yesterday but life had decided otherwise…

 Here’s the first recipe of many others where I’m using the amazing grains of paradise that we learned about in my previous post.  Like I told you in that post, one of my favorite uses for these amazing peppery seeds is on roasted veggies and what’s better than roast fennel bulbs seriously.  This recipe is simple and delicious plus you can serve this side dish with pretty much anything.  I personally love it on the side of  a big juicy steak 😉

Slow Cooked Lamb Loin Chops with Spicy Fennel Rub

Ahhh today was such an amazing day 🙂 I took it easy, had fun in my kitchen and went for many long walks outside with my love and my doggy to enjoy the fresh cold September wind and the gorgeous sun that we had today. It’s not surprise anymore, the weather is getting colder and fall is officially here.

I had some lamb chops in my fridge and was out of ideas of what to do with them but after getting ton’s of great ideas from twitter and facebook, I deceided to create this oven slow cooked version that I know you will LOVE! I just finished eating it and I’m almost thinking going to get another plate. I served this “stew” like on a left over Basmati rice I had and it was amazing but feel free of eating it just like this or maybe with Quinoa? Hope you enjoy this recipe and have a great Sunday everyone
