Grilled King oyster mushroom salad

Don’t get me wrong, I love making sweets.  There’s something really happy about making something full of sugar because you know most people will be happy to eat it and you’ll get the satisfaction of watching them stuffing their faces with something you made with love.  Now, thing is, we can’t really eat sweets all the time (that’s a tragedy if you ask me) so this recipe is coming just at the right time to balance all the sweetness I’ve published on the blog lately.

King oyster mushrooms are one of my favourites because they are super meaty and they look beautiful in a plate.  Paring them with roasted tomatoes (aka: umami bomb – thank you Ivan Ramen for coining the term) and miso, you’ll quickly understand why I decided to post this recipe on here.

Sooooooo…. this sentence is getting redundant but, I really hope you get too try this quick and easy grilled king oyster salad with miso dressing on days where it’s too hot to eat anything to complexed or when you’re just too lazy to break your head in the kitchen.

  This is a nice recipe for all your meat lovers, vegan and vegetarian hater friends out there.

We all know a few, those people who absolutely despise tofu and would never indulge in a nice tofu anything even if their lives depended on it.  It will be able to fool any of those harsh critics and amuse them by the thought of eating unicorn meat.

Make the test, challenge one of your buddies and let’s see if they are able to taste this awful tofu they are so scared of.

No Fuss Grilled Hummus & Tomato Toast

Because it doesn’t have to be complicated to be delicious.  Here’s a simple recipe with easy to find, local ingredients that you can make at any time of the day!  Part of the #NoRecipe trend on twitter… it could easily be become a fun appetizer if cut in small pieces.

No Fuss Grilled Hummus Toast

Ingredients
  • Rye Bread Slice
  • Roasted Garlic Hummus
  • Fresh Tomatoes from the Garden
  • 6 years old Cheddar Cheese (or any other strong cheese)
  • Chopped Coriander for the garnish
Instructions
  1. - Toast the bread
  2. - Spread your hummus
  3. - Add the sliced tomatoes, cheese on top and grill for 1-2 minutes in the oven (on broil)
  4. - Sprinkle the freshly chopped coriander leaves
  5. watch out, it might be hot.... Bon Appetit!

Green Spinach Pesto

Here’s a fun and “jazzed up” pesto recipe made with fresh baby spinach, hemp seeds, arugula, coriander, Parmesan and more!    The first time I made this, it was to go with some homemade raviolis stuffed with light ricotta and feta cheese and ohhhhhh!  …I made a lot of happy tummy that night.

To make the pasta sauce, I stretched a few tablespoons of this pesto with coconut milk and a tab more garlic (I’m obsessed with garlic so taste before adding more) and just like that, I had made an flavorful and creamy sauce.  Later that week, I used it for grilling some juicy steaks and even made a dip for the meat!  Both experiences were very welcomed by everybody who had the chance to taste it and now it’s your turn to try 🙂

Easy, Breezy, Guacamoly…

Oh sun where are you??  You dont dare to show you face often enough in Montreal these days and how am I suppose to enjoy this delicious Guacamole on my balcony with a good book if you’re never there!! 🙁 #SadFace

Ok seriously, the past few days and weeks have been quit rainy, gray and cold on my side of the planet.  I’m starting to think  that we are going to have a very rainy summer if we even have one.  At least my garden is not doing THAT bad and I’ll be tasting some of the juicy tomatoes growing in my plants soon but I feel like it could be stronger.  Mother nature doesn’t seem to like us that much and I’m hoping this post could be the beginning of an apology for what ever she feel like we did around here….  This year’s winter was harsh, then we barely had a spring and now it’s raining like crazy… ugh…

I hope the weather is a lot nicer on your part of the planet and you have all the sun you need to put yourself on your balcony (or in your backyard) with a beer, a good book and this flavorful guacamole that takes only a few minutes to make….

Thai Fish Curry

I made this the other day and it was a real success!  I wanted to make something with the yellow curry powder that I have sitting in my pantry because it’s incredibly tasty and I’m always wondering what to do with it.  I took my inspiration from a restaurant I went with a friend the other day and on the table beside us they served a fish curry (that’s what I thought it was) that smelled amazing.  From there I had fun and experimenting to end up with an amazing surprise!  Hope you’ll like 🙂

3 Easy, Fast and Favorful Dipping sauces ready for BBQ season!

These sauces are good with fries, raw veggies, sandwiches and more!  Try them out and bring me back some comments!

2 tablespoon of Mayonnaise

1 tablespoon + 1 teaspoon of Dijon mustard

2 teaspoons of crushed, dried Rosemary

Pinch of crushed black pepper

2 tablespoon of Mayonnaise

1/4 teaspoon of coriander seed, crushed

1/2 or 1 teaspoon of grounded Cardamon

1/4 teaspoon of ginger powder

Pinch of Cayenne Pepper

2 tablespoon of mayo

1 teaspoon of honey

2 teaspoon of crushed dried thyme

Pinch of cayenne pepper
