Toasted Walnuts & Cinnamon Cookies

One of my all time favorite cookie recipe… Full of cinnamon and walnuts, these are going to become your new favorite after school cookies ๐Ÿ™‚

– INGREDIENTS –

4 tablespoon of margarine

1/2 cup of brown sugar

1 egg

1 cup of toasted walnuts, chopped in small pieces

1 teaspoon of cinnamon

1 cup of flour

1/2 cup of quick oats

1 teaspoon of baking powder

1- Pre-heat the oven at 350 and line a baking pan with parchment paper.

2- On the oven stop start toasting your walnuts in a non-stick pan till almost all the sides of the nuts have a darker color (make sure you don’t burn them), then chop with a big knife in very small pieces.

3- In a mixing bowl, whisk the margarine with the brown sugar and the egg till you get a nice and smooth paste.

4- Add all the other ingredients to the bowl and mix well.

5- With your hands, form little balls and flattern them with your hand first and then with a fork to give it a little pattern on the top.

6- Bake for 10 minutes, transfer on a cooling rack and wait a couple more minutes before eating.ย  Enjoy!
