I’m calling those the amazing dates cookies because they are literally amazing. I found the recipe in a “Quebec classic recipes” book and I tweaked it to make them perfect for my own taste. Max who doesn’t like dates BEG me to make them when I buy dates at the grocery. They are soft, sweet and healthier than some other cookies you buy or make 🙂 It’s a MUST try!
– INGREDIENTS –
1/2 cup of finely chopped nuts (I used walnuts)
1 cup of finely chopped dates
1/3 cup of sugar
1/3 cup of water
Pinch of cinnamon and/or cardamon (optional)
1/4 teaspoon of baking soda
4 tablespoon of margarine
2/3 of brown sugar
1 1/2 cup of flour
Pinch of Salt
1- On the stove, in a small sauce pan at MEDIUM LOW heat, add the nuts, dates, water, cinnamon and sugar. Let it cook and simmer for 6-7 minutes or till the texture get more uniform and gooey. Remove from heat and put it in the fridge to cool.
2- In a mixing bowl, whisk the margarine with the brown sugar and egg till you get a soft pate. Add the four, baking soda and the pinch of salt. Mix well with your hands.
3- On a waxed paper, take your flour based dough and spread it out in the form of the paper and use a rolling pin to make it equal. Bring back your dates mixture from the fridge and lay it on the first dough as equally as you can.
Roll the dough using the waxed paper to help you to create a beautiful swirly design when you will cut your cookies. Keep your roll in the waxed paper and put it in the fridge for 1 hour or 30 minutes in the freezer if you want to eat them fast.
4- Heat your oven at 350 and cook for 12 to 15 minutes.
