Pulled BBQ chicken Taco

Pull-Apart, Pulled or Shredded BBQ Chicken can be eaten in so many ways… today I decided to make tacos with it but you should also try it out as a burger between a nice and fresh kaiser bun.  It’s easy, flavorful and I personally don’t know anybody who didn’t enjoy this recipe.  The sweet touch of maple syrup, fresh avocado slices and grilled bell peppers, it’s making it the best easy summer dinner or comforting winter meal.

– INGREDIENTS –

2 Chicken Breasts

1/2 cup of white onions cut in small pieces

1/2 avocado sliced

1 grilled red bell pepper

hot peppers for topping (optional)

grated cheese for topping (optional)

For the Sauce:

1 1/2 cup of tomato sauce

1/4 cup + 1 tablespoon of maple syrup

5 roasted garlic cloves crushed

1 teaspoon of garlic powder

1 teaspoon of dried marjoram flakes

1 teaspoon of chili powder

2 tablespoon of soy sauce

1 teaspoon of paprika

Pinch of big salt and black pepper to taste

1- Prepare your sauce… In a small sauce pan, on the stove, put all the ingredients together and let it simmer at low heat for 10 to 20 minutes COVERED so all the taste mix well together.  This step could be done one day in advance or at the last minute.  If you do it at the last minute, I suggest you let the sauce cool down a bit to give all the ingredients even more time to marinate.

2- Pre-heat your oven at 325.  In a glass Pirex with a lid (dutch oven – heavy pot) put your chicken breast and onions with a drizzle of olive oil.  Pour the sauce on top, cover it and put in the oven for 2h.

3- Remove the Pirex from the oven.  Use a slotted spoon to remove the chicken from the pot and start shredding it finely with two forks.  While you are shredding the chicken, put the sauce back in the oven on HIGH heat UNCOVERED to reduce the juice from half, then pour the thick sauce over the chicken.  You can also keep a small quantity of the sauce on the side to pour over your assembled taco or burger 🙂  Enjoy!

    Took me a while to get all the ingredient together. For some reason you can’t find maple sirup over here that easy anymore. But here I am eating your taco, of cause I don’t eat meat and have no oven, so I had to improvise a bit. I took veggie mock chicken and slowly fried it with the onions. Not 2 hours, the seitan would get way to dry. But it should be quite similar, not quite as crispy maybe.

    It is really great. I hoped to take some to work tomorrow but that’s probably not gonna happen^^
