Zesty Carrot Salad

I have an overload of carrots in my fridge so this week I’ll be cooking and hopefully posting a lot of carrots related recipes.  Now let’s start by something simple, yet delicious 🙂  Hope you enjoy this zesty carrot salad with a lemon and feta cheese.

– INGREDIENTS –

Finally chopped carrots

feta cheese

for the dressing:

2 tablespoons of extra virgin olive oil

Juice of half lemon

1/2 teaspoon of garlic powder

1/4 teaspoon of dried dill leaves

pinch of big sea salt

pinch of grounded black pepper

1- In your electric chopper, finelly chop our carrots and set aside.  Ground the feta cheese in little bits with your hands.

2- Mix all the dressing ingredients together.

    That is so pretty! I think I would add an extra zap of color by chopping up some broccoli too. 🙂

    Dear Ariel,

    I live in close quarters in a small room and all I have to work with is a pot that boils water. Can you please post a recipe that will be impressive yet simple with little clean up?

      wow that’s a pretty intense challenge! do you have at least access to a fridge and a grocery close to get products? give me more info on what you have to use… I’ll thinking about something 🙂

    just tried it. It tasted great.

    As most of your fans I have no help with the carrot so I had to use my hand. Also it was a good two hands full of carrot it just took 2 minutes to bring it down.
    xD sry, couldn’t help myself.

    I used fresh garlic, still had a lot of that. I should have let it rest for 10 minutes or so to let the flavour spread. And next time I try a little less lemon juice and cool it down in the fridge to get that extra freshness.

    But Ariel, that is another great recipe. Thank you.

    I think i will serve this to busta the rabbit,if i get the ok i wip it up again. Cooking time would not be long. That’s what I’m after. Thsnks is it french.

    I hate carrots ! So I was very surprised at this recipe and think I might consider carrots as food now.
