Poor man's pudding (Pudding Chômeur)

  • For the cake:
  • 1½ cup of all purpose flour
  • 1 teaspoon of baking powder
  • ¼ cup of butter (room temp)
  • 1 cup of cane sugar
  • 1 cup of milk
  • For the sauce:
  • 1 cup of maple syrup
  • 1 cup of brown sugar
  • 1 cup of hot water
  • ¼ cup of butter
  • ¼ teaspoon of vanilla extract (optional)
  1. - Pre-heat your oven at 325F. Get yourself a 9x9 oven friendly dish... I love my creuset dish for this job.
  2. - In a mixing bowl, start by making the cake part. Cream together the butter and sugar until smooth and slowly add the flour and milk alternatively until your get a smooth batter. Reserve.
  3. - To make the sauce, put all the ingredients in a sauce pan and heat it up on medium high heat (don't stop looking at it because sugar as the tendency of overflowing). Bring it to a boil and, while stirring a bit, let boil for 2-3minutes.
  4. - Transfer your cake batter at the bottom of the 9x9 dish and smooth the top, pushing the batter in every corner to make sure it's equally spread out.
  5. - Drop the sauce on top of the cake and use a spatula to slow down the liquid to its drops on the cake without making a big hole.
  6. - Carefully transfer your dish in the oven (I suggest you put a baking pan under because it might overflow) and bake for 45 minutes. Wait until it's a bit cooled down (but not too much) to enjoy!
